Frozen Yogurt Granola Cups are the perfect combination of creamy Greek yogurt, wholesome oats and fresh berries made in a muffin pan to create little frozen cups. These little cups are a fun way to enjoy fresh berries and yogurt instead of having these ingredients in a Yogurt And Fruit Parfait or a Frozen Yogurt Bars Recipe.

This fun recipe can be enjoyed as a snack or dessert and can be modified any way you like. You can even make the recipe dairy-free by simply using a dairy-free yogurt.

Ingredients

  • 3/4 cup oats

  • 1/2 tsp cinnamon

  • 1/4 cup almond butter

  • 3–4 tbsp honey (depending on desired sweetness)

  • 1 tsp vanilla extract

  • 1 1/2 cups Greek yogurt* (see note)

  • Berries of choice to top

    Instructions

    Mix the oats, cinnamon, almond butter, honey and vanilla extract together in a bowl until it forms a sticky dough. (If the dough feels really dry, add more almond butter and honey.)

    Line a muffin pan with muffin liners and add a spoonful of the granola dough into the bottom of each muffin cup. Press firmly with your fingers to make a sturdy base.

    Add a spoonful of yogurt to each cup, then top with berries and any leftover granola.

    Place in the freezer to set for at least 4 hours. Let thaw before serving.

Ingredients:

  • 1 ½ pounds strawberries, quartered

  • 4 cups cucumbers, chopped

  • 1 small red onion, chopped

  • 8 ounces feta cheese, cubed

  • ½ cup fresh mint, minced

  • ⅓ cup olive oil

  • ⅓ cup golden balsamic vinegar

  • 2 tablespoons lemon juice

  • ¼ teaspoon pepper
